it was my friend jessica’s birthday the other day, so we celebrated by baking a beautiful beet cake! (well, to be honest, my friends made the cake and i just documented its creation.)
i baked this cake once last year, but this time around was so much better. it was probably due to the addition of icing, a second layer, and the fact that miss taylor is a baking wizard! you can find the whole recipe (and more photos) on her lovely little blog.
who ever thought beets and chocolate would go hand-in-hand! they totally do.

i’ve never heard of anything remotely like beet cake and yet my mouth is watering! additional shout out to your friend’s shirt/dress/apron. whatever it is, i love it :)
i think it’s safe to say she made that dress! she’s a crafty one :)
I just made a beet cake last week! It was a variation on red velvet which called for beets instead of food coloring. I didn’t have high hopes for it, but it sort of grew on me. I like the old fashioned mixer. Great pictures of a fun time together.
The uses for beets are almost endless. This cake looks fantastic— I’m adding it to my list :)
